View Full Version : RFRW's Spicy Thai Vegetable Wraps

I just made RFRW's Spicy Thai Vegetable wraps for the second time and they are sooo good. I'm going to make my own version that doesn't take as long to make since I would never make the original version regularly. They are also very filling as they contain cashews and almond butter (about 1500 calories of those 2 ingredients, I cut the recipe in half but I would have eaten them all, I regret it now).

The collard green leaves at the grocery store were all wilted, so I look at other things that would do the job and found a local living boston lettuce sold in a plastic dome which still has it's roots and it worked great. I normally don't like using leaves for wraps but the boston lettuce does a good job, I will be buying for of it for this purpose.

I attached a picture of the rolls made with the boston lettuce leaves and the tamarind dipping sauce.

Once I invent my own easy/quick version I'll post it, and I'll make sure it tastes just as good.

I'm almost done making my own version, I'm glad I did only half the original version yesterday as I was able to try my version after but I spotted a few mistakes, I'll be making them again today and I assume they will come out right without modifying my own recipe and then I'll post it, I don't want to waste anyone's time with a flawed recipe so I'll make sure it's right first.

I also put a banana (instead of the mango called for in the original recipe, my reasons being it's quicker to open, higher in calories, and cheaper) and it gave it a really good taste with the other spices. I may call them Sweet & Spicy Thai rolls.

By the way has anyone else used Boston lettuce leaves as wraps? They work really well, I used to hate vegetable leave wraps because only like 10% of them were suitable, not available in organic and expensive for something that's 95% water and only 10% are usable. With the boston lettuce, it's grown in a greenhouse/hydroponically without all those "whatever-icides" and most leaves are intact and large.

These are the best! I love love love these. And the nut sauce for the cabbage is yumm..... so is the tamarind sauce.

Whooshers I don't even know how many times I've made these..... at least over a dozen.
