View Full Version : How would you use fresh apricots?

Aside from simply eating them by themselves? I've never used fresh before and found some on sale....now I'm searching recipes and could use a few ideas. :)

Well, you could dehydrate them and have them as a snack.

Add to any ingredient that calls for raisins (cut 'em up).

Add to Green Smoothies (of course).

Blend and make an apricot sauce for pancakes or raw ice cream.

Perfect, I don't really like raisins anyway! Oh gosh, apricot FRUIT LEATHER, how could I forget that?!?! Off I go to blend and dehydrate.

Are they good? Every once in awhile I buy fresh apricots because they look so good, but every single time they are mealy and tasteless! :(

They are delicious....when they're good. Hmmm. Were the ones you picked up out of season?? Well, you're in Florida so I'm not sure where you get yours from. Even if they weren't out of season, it's difficult to find good stone fruit. At least in Upstate New York it's pretty hard. It's so hard to find stone fruit that is ripe at the store. If you bring it home before it's ripe, you run the risk of it not ripening properly, i.e. turning mealy. I will have to grow my own when I have my own house!!

I've been making a lot of fruit leather. I want to make a lot now while the fruit is plentiful and good, and then I'll have it in the winter when the produce isn't so great.

I don't personally like apricots in any form. But I used to make a SAD dessert pizza for my husband using sugar cookie dough as the base, then topping with honey sweetened cream cheese and all sorts of fruits, including apricots, sliced. I would then drizzle it with some watered down jam.

I'm sure you could do something similar in raw form, perhaps as little tarts, using a nut cookie as the base and a sweetened, non dehydrated cheese as the next layer.
