View Full Version : Indian Spinach Curry and Stuffed Tomatoes recipes

As I had said I while ago I'm writing a recipe book to help me make more money as the profits from my business are slowly falling.

The book will specifically have recipes that:
-Are quick and easy to make, I'm good at finding tricks to make things quicker and more efficient to make with less cleaning, for example while many recipe books will ask to use a garlic press to press garlic and then put it in the food processor, I'll say to put the garlic in the food processor and process it by itself, then add the remaining ingredients, this saves time and cleaning of one additional tool.
-Taste great, and I'm very difficult with what I eat, so if I like them, anyone should
-Are filling and suitable for active people, many of my raw recipe books have recipes that taste great, but simply don't have enough calories to be worth doing for me, so I made my own versions that taste as good but with more calories

I decided to post 2 that I've been making regularly, let me know what you think. In the indian curry, I had one recipe that was filling but not too good, another was delicious but not very filling, I took the best of both and made a good tasting and filling spinach curry.

Indian Spinach Curry
A quick & delicious Indian spinach curry.

3 cups spinach or baby spinach
½ head of broccoli
½ cup water or coconut water
½ cup macadamia nuts
1 tomato
1 clove garlic
1 ½ t ginger
1 t cumin
½ t Celtic salt
½ t coriander
½ t garam masala
½ t jalapeno
¼ t cardamom
¼ t turmeric

Place all ingredients except spinach and broccoli in a food processor and process to make a smooth sauce, pulsing a few times to break down the nuts. Add spinach and broccoli and pulse several times to break into smaller pieces.

Stuffed Tomatoes
A simple way to turn two tomatoes into a great tasting meal.

2 large tomatoes, sliced along their height and hollowed (keep the insides of one)
Insides of one of the hollowed tomatoes
1 cup walnuts and/or sunflower seeds
½ clove garlic
2 T chopped onion
½ T olive oil
½ T Chili powder
¼ t cardamom, optional
¼ t cumin, optional
¼ t Celtic salt
Cayenne or jalapeno to taste

Place all ingredients except hollowed tomatoes in a food processor and process until fairly smooth. Scoop mix back into tomatoes and serve. You can optionally dehydrate these for an hour or two to warm them up and crisp the tops.

Let me know what you think of these, I find both of these delicious, quick and easy to make.

These sound really good. Even though I'm not trying to gain weight like you are, sometimes I really need something filling to make me feel like I'm not being deprived on raw. (Probably because I prepare a meal for my family each night) But these look like they will be yummy and filling. Thanks!
