View Full Version : Does anyone have a lemon pudding recipe that doesn't use avocadoes?

All the ones i've seen have avocado in them.
If you have created one of know of one please let me know.
My lemons are starting to look "not so new" anymore and i really want to use them before they go bad.

I have not tried this, but want to!
Throw all of this in the vitamix:
Fresh coconut meat
Agave nectar
Fresh squeezed lemon juice
Taste as you go until it has the consistency and lemoniness that you want. You could even throw a teeney bit of turmeric in for color. This would be a yellow lemon pudding.

If all else fails....juice the lemons and put the juice in the freezer to use at a later date.

2 cups almonds
2 cups water
1 tablespoon psyllium husk (sorry if I spelt that wrong)
Agave, maple syrup... your sweetener of choice, and however much you like
Juice of 1-2 lemons depending on how tangy you like it

All these ideas sound so good. But I thought I'd try the one with coconut. Any young coconuts I've bought here have such a very thin layer of meat inside them. I'd like to try the older ones - with the dark brown bark? What do you think?

I don't know why they wouldn't work. The Vitamix will be able to handle "tougher" coconut meat. You may need to add more liquid (lemon juice, agave, coconut water or just plain pure water). Again, I have NOT made this recipe. If you make a combo that works...please share your measurements. I understand only getting a little bit out of young thai/white coconuts. I still scrape them out, though, and freeze it in baggies. That way I always some coconut meat on hand.
THANKS!, for the well wishes. It came off very fast...like six months. I have fibromyalgia, so once eating 100% raw starting helping with my pain level I hit the gym...BIG TIME!!! I work out six days a week. Yee haw!!! :D

walnutty - thanks for the help. And congrats on shedding 110 lbs in only 6 months! :D What an inspiration for all of us. I am seeing that raw food gives me the kind of energy that actually has me looking forward to moving again at the gym.
