I found a great recipe that I want to make, but I'm the only one in my house that's raw and I want to know how quickly I should eat it!

I put a lot of garlic in mine and it seems to last quite a long time....a month or more.

WOW! I haven't found any raw recipe to last that long, w/out freezing it.

rawererin - maybe only make half the recipe??? :confused:

A MONTH?!? Is it the garlic that causes this long life? Last time I ate something that was in the fridge for 4 days I got severely sick.

When I make salsa it's always just what I'll eat at a time, after all it takes about 5 minutes to make.

My last salsa lasted me 8 days. It was diced tomato, green, red, yellow, orange bell peppers, jalapeno, lime juice, sea salt. I add my fresh cilantro in after I dip me some out so it doesnt get too mushy in the fridge.

Yeah. I would say about a week is a safe bet. Personally I think that salsa just gets better the longer you let it sit (but not too long of course!) But I don't think anyone can say precisely when it will start to go bad.
