You all probably have this recipe or a version of it, but...
Many years ago I found a recipe where you chopped up a whole bunch of vegetables and mixed it with cream cheese for a tasty spread. I decided to adapt it.
I made cream cheese with cashews (basic recipe).
I chopped up very fine in the food processor:
2 Tb carrot
1 Tb onion
2 inch stalk of celery
1/8 bell pepper.
It's supposed to have a radish, too, but I couldn't find one.
I mixed the ground veggies with the cream cheese and let it sit in the fridge overnight so the flavors could blend. It's a great spread on flat bread. I just had some with some chopped tomatoes and cucumbers on top. Yum!
