Why not a Strawberry Meringue pie here. But you'll see lemon instead. I don't know about maple syrup but maybe agave. I never used hemp butter but why not coconut oil/butter. Here goes:
Lemon Meringue paul benhaim
1 avocado, skinned and de-seeded
½ to 1 tbsp hemp butter
½ whole lemon
3 fresh dates or 4 dates, soaked
½ tbsp maple syrup
Blend thoroughly until smooth.
Serve garnished with thinly half slice of lemon and sprinkle of hemp nut
I found some others dating back years:
Make a lemon pudding, put it in a date-nut-coconut crust and top with cashew cream. If you don't use honey, any sweetener would probably do. I have NOT tried this; it's just three separate recipes I've collected and "not" made yet:
Lemon Pudding --pam from another group way back...
2 cups avocado, mashed
1 1/2 cups lemon flesh, without peel and seeds
1 lemon, juice of
2 cups pitted dates
4 Tbs. honey (optional)
Peel lemons with a knife. Cut them in half, and slice. removing the seeds. Blend the lemon flesh with the mashed avocado, dates, and lemon juice. A food processor works well for this. If desired, add some honey. This will be the best lemon pudding you will ever taste!
Coconut Crust
The coconut in this crust would probably really compliment the lemon flavor much more than I simple date-nut crust...
1 c. shredded dried coconut
2 c. unsoaked macadamia nuts (or used unsoaked almonds)
1/2 c. pitted soft dates, chopped
1/2 t. sea salt
Process coconut and salt to a fine meal in the food processor. Add the macadamias and pulse to a fine meal. Add the dates and pulse until mixture sticks together. Press the crust into a pie plate, pour in the filling and chill until set, about 1 hour. This make a pretty thick crust. You might want to cut the recipe in half and just make a thin crust that covers the bottom, but not the sides, of the pan. Or substitute some other date-nut crust recipe. But I think you will get closer to a lemon meringue pie taste with this crust.
Cashew Cream
1 c. cashews, soaked
1/2 c. water
1/4 c. honey
1 vanilla bean, scraped (optional)
Process all ingredients. Serve over pie. Makes 1 1/2 cups, which is probably way too much.
Won’t taste avoc. In it and here’s comments
The taste of the avocado goes away... it acts kind of like cream in dessert recipes like this.
If you substitute raisins for some or all of the dates, you will get more of a graham cracker crust taste.

* 1/8 cup of honey in the topping.
As far as the crust, it turned into a butter rather than crust, so I had to add more coconut to make it firmer, which stil did not make it into a crust. So, next time I am going to reduce the amount of macademia and dates in the crust recipe.
Put the three layers into a ceramic pot with lid. Everyone loved it! It was delicious!!! ===
