I'm apparently not good with measurements. This recipe has thrown me off. It asks for an ounce of cacao butter. Do I melt and WEIGH this or do I melt and MEASURE this as an ounce in my cup measure? Ugh. I'm stumped and I know this is probably obvious. Sorry, having a moment of stupidness. Thanks!

You would never have to melt a solid to measure it. But is it really solid? If it has a texture like coconut oil where it is sort of solid by not hard as a rock, then you should measure it.
If it is in a bar like the cocoa butter I used to use as a kid for sunbathing, then you should cut off a piece and weigh it.

Oh, no...it's a rock. Lol. I know that my chef friend who I'm now out of touch with but who was trained by Cherie Soria used to melt and weigh hers. Guess I'll break down and buy a food scale.
