Where is the best Kale Salad recipe please, dear rawbies? Thank you so much.:)

Here's a couple:

Raw Mediterranean Kale Salad
Many thanks to friend of the farm, Chef Mehmat Ak, for sharing this recipe. Mehmet says: “When [raw] kale is cut into thin strips and marinated in a dressing, it has a wonderfully soft and juicy texture that makes it delightful in salads. This nutritious salad is visually beautiful, and sure to become a staple recipe for your family and friends.”

2 small bunches lacinato kale, stemmed
¾ teaspoon sea salt
2 tablespoons extra virgin olive oil
1 tablespoon Nome Soya.
¾ teaspoon raw agave nectar
1 tablespoon spicy curry
2 tablespoons lemon juice
¼ teaspoon black pepper
¼ cup pine nuts
¼ cup wolf berries (goji berries), soaked 10 minutes, drained, and rinsed
¼ cup thin sliced sun dried tomatoes

Stack two leaves of kale and roll tightly. Cut the kale crosswise into very thin strips. Repeat with the remaining leaves of kale. Add ½ teaspoon of the sea salt and massage the kale well with your hands, in order to soften it.

Add the lemon juice, olive oil, nome shoya, agave nectar, spicy curry, remaining ¼ teaspoon sea salt, and black pepper, and toss well with your hands, working the dressing into the greens. Gently toss in the pine nuts, sun dried tomatoes and Wolf berries.

Variation 1: Substitute ¼ cup sliced kalamata olives for the wolf berries and add 1 diced red bell pepper.

Variation 2: Eliminate the wolf berries and the pine nuts. Add 1 seeded and diced tomato, 1 diced avocado, and a dash of cayenne pepper.

Serves 6.

1 large bunch Kale finely chopped
2 carrots shredded
pint of grape tomatoes
1/2 cup soaked pinenuts
1/2 cup sundried tomatoes soaked and chopped into bitty pieces
1 red onion cut into thin rings
raw black olives
Juice of one lemon
1/4 cup cold pressed olive oil
sea salt
few dashes of bragg's liquid aminos
Mix all ingredients...set in fridge overnight. Enjoy the next day!!!

Trinity Kale Salad
serves 2-4 people
Ingredients
8 leaves each of curly kale, russian kale and dino kale (shredded)
1 tomato (diced)
1 avocado (diced)
3 tbs. onion (diced)
2-3 tbs. olive oil
2 tbs. agave nectar
4 tbs. lemon juice
Sea salt to taste

How to: Mix everything in the bowl. With your hands, massage the salad for about 5 minutes. Let the salad marinate for about 2-3 hrs. before serving. Garnish with cherry tomatoes.

I cannot get enough kale salad lately! Usually I mix other lettuce in, but sometimes I just have all kale! I use the curly kale. Then I use a tahini dressing:

tahini
lemon juice(lots)
salt
garlic

It's SO GOOD! and bonus...if you dehydrate it, it makes chips! What could be better? :D

dinosaur kale
ume plum vinegar
flax seed oil
dulse
dried figs
greek olives
tomato
avocado
pine nuts

Prep: Put the dried figs in a little water to soak

Mince the kale (or whirl it in the food processor). Add a small amount of ume plum vinegar and massage it into the kale. Add flax seed oil and massage some more. Rinse, drain, and mince the dulse. Drain and chop the figs. Chop greek olives, tomato, avocado. Toss it all together with the pine nuts.

This is a high fiber, intense, flavorful salad for the dedicated raw foodist.
Chew it well and feel the power of pure nutritioin.


A simple, satisfying alternative that travels well:

Mince the kale, massage with lemon juice or your vinegar of choice, (sea salt, optional). Add your favorite oil and massage some more. Throw in some raisins, (or any dried fruit) and sunflower seeds, (or your favorite nut).

Glad you asked. I know what I'm having for dinner today.
