Last night I made a coconut cream pie with a young Thai coconut I was finally able to purchase. It was quite yummy ( I had a little, ok a big, sample taste last night) This morning the children wanted to know what was for breakfast. Well, why not eat pie? So we all had coconut cream pie for breakfast this morning and it was very delicious!

Ah the joy and simplicity of raw when pie becomes your breakfast. Mmmmmmmmmmmm!

:D I just purchased three young coconuts the other day and used one blended and spread over sliced strawberries and hemp seeds.
It made a wonderful raw breakfast dish.
I loved coconut pie that you bought in the store when i wasn't raw but now you have created a pie that i would love to eat.
So please post it:)

I love eating decadent desserts for b-fast! Nothing like it. Co-workers look at me and drool...AND I've eliminated weight eating this way (i.e. eating 100% raw). Then they shake their heads and walk away! LOL!!!
So cool! I LOVE this lifestyle and way of eating. SO healthy and healing and good!!!

Even though I don't need to release weight anymore I have not been able to eat raw desserts for anything except dessert. I haven't jumped that hurdle yet but rawk on for those of you that have!;) Maybe I'll get crazy and do it someday. Thanks for the inspiration.

It was a little weird at first and the children thought I was a bit nuts! They were like "you can't eat dessert for breakfast" So I asked them what I put into the pie, as they all watched me make it.

They replied, "coconut" ok can you eat coconuts for breakfast? "yes" ok what else is in the pie? "bananas" can you eat that for breakfast? "yes" what else? "nuts" do we eat those for breakfast sometimes? "yes" By this point they were all sort of giggling foolishly at me and grinning. It was cute! Then my big helper girl who is eleven and wise beyond her years pointed out that people eat chocolate pastries and donuts for breakfast so why not my yummy, healthy, good for you coconut cream pie? Needless to say I didn't have to do much convincing to get them to eat the pie for breakfast! They were just too cute!

Bethanie, I will work on the recipe for you. I need to tweak it a bit as I just kind of threw things in there and I only had one coconut. It would be so good with three! Yummy! Those things are so delicious! We watched several youtube videos on how to open them before trying to do it ourselves!

Veganforlife - doesn't that just astound you? They watch you do so well and see what you get to eat and then shake their heads at you?! Doesn't make any sense huh?

Why can't one eat pie or ice cream or decadent desserts for b-fast? "They" eat doughnuts and SAD/CRAP all the time!

Yes. It totally flips me out. Oh well. I'm here to heal me and if one person sees what I'm doing and tries it and does well, then that's good. If not, that's okay too...

I'm generally not hungry in the morning, so no decadent pies for me for breakfast!

but...lunch...dinner...dessert...that works! hehe:D
