dehydrating them.
I slice them real thin with my mandolin lengthwise and slice eggplant thin like for bacon slices.
Also slice thin sweet onions and put them together in my dehydrater for about 45 min. took them out and put them in my blender and blended them together for about 2 to 3 minutes till almost like a pulp.
I stuffed the mixture into halves of sweet red peppers, put back in dehydrater to warm for about 30mins.
Top with diced red tomatoes and thinly sliced basil leaves.
So good and yummy, the sweetness of the squash and sweet onions come through beautifully.
