I have the same question as someone gave me a bunch. From searches I've done it's poisonous raw so not sure it can be used without cooking it. Hopefully someone else will chime in.

Hmmm.....I thought only the leaves were poisonous :confused:

I grew up eating raw rhubarb and am certainly still kicking. The leaves are poisonous. Used to sprinkle salt or sugar on the stalk and eat away. This was from stems cut right from the garden. Adored stewed rhubarb (sadly is a cooked dish), but maybe could be dehydrated or pureed to resemble the sweet/tart balance that is very appealing.

Good to know, Lady Green Jeans, thank you. To me, rhubarb looks like red celery. I know it doesn't taste like it because I've had it in strawberry rhubarb pies. Maybe I'll try it with salt or honey sometime.
