I eat a lot of sprouts, including alfalfa sprouts. I would guess that I often eat about four cups of alfalfa sprouts a day (1 tablespoon of seeds). I mix them with clover and other little sprouts, but alfalfa is the least expensive so I include a lot of them.
I know that there's some debate about whether the amount of saponins & L-canavanine sulfate in alfalfa sprouts is harmful -- the most info I've been able to find is that "large" amounts are not so good but "moderate" amounts are generally considered fine. But I've never seen any info on what's considered large or moderate. I don't think I'm experiencing any problems from them, but I don't really know what problems they cause.
This is hard to research so I wouldn't expect anyone to know unless they're really, really interested in alfalfa sprouts! But maybe someone out there is? :)
