Blueberry Un -Gel-O

Please follow this one to the "t" to get it to work properly. You can only use fresh fruit

3 cups of fresh blueberries
1/2 cup fresh strawberries
1/2 cup of fresh pineapple.

In a blender or food processor combine the blueberries and the strawberries, blending until it forms a liquid. Next drop in the pineapple chunks and stir. You want the pineapple to stay chunky. After stirring, pour into your mold or individual serving cups. Chill at least 45 minutes before serving (note from me - I prepare at night and then it is ready in the morning).

What happens for the homeschool moms is that, anything made with pulverized blueberries will stiffen because of the amount of pectin in blueberries. This is really good!

Un-Yogurt (Blueberry, Strawberry or Peach) - have you been missing this - I love this.

4 cups sunflower seeds
2 cups unsweetened banana chips ( make your own if you have a dehydrator, and especially oif you made them too hard)
3 cups of any of the fruit above
1 cup lemon juice
2 cus of water
agave nectar or honey as desired.

Using the S-blade pulverize the banana chips. While the food processor is running, add the sunflower seeds and the fruit. Finally, add the remining ingredients: lemon juice, water and sweetner (remember it is what you desire - I use about 1/4 cup- a little less if the fruit is really sweet). The water will give the mixture moe of a gel-like consistencey.

Blueberry-Cinnamon Rolls
3 cups of rolled oats (use the food processor if you don't have the oat roller)
1 lb seeded dates (you never know :) )
1/2-1 cup blueberries
1 cup apple juice
3 tbs cinnamon
1 tsp nutmeg

Using a bowl, slowly add apple juice to the oats, mix to dough-like texture. Blend the dates and blueberries in food processor. Add cinnamon and nutmeg to dates and blueberries. blend that to a jam-like consistency (now, for those who are talented in making bread or crackers - this is really good on those too) Then fold into "oat-dough and mix well. Roll into (wet your fingers a little) inch-thick log and cut into sections and serve. Makes 16-20 rolls and takes about 20 minutes.

Wow, Sweet lips, those recipes sound great!! Thanks so much for posting them! I'm temporarily displaced with no access to my dehydrator (which I'd gotten right before being displaced, so I haven't even been able to use it) :( , so all recipes I can find that don't require a dehydrator is really great!! Thanks so much!! :)
