View Full Version : Received a motherload of free meyers lemons--recipes needed!

My boss has generously shared meyers lemons from his tree and now I am needing recipe ideas to start using up this wonderful, organic gift. Would love to do a gelato (one of my favorite SAD addictions from the past) or any raw dessert for that matter.
If anyone has ideas/suggestions/recipes to share--would be most grateful.

i'm not sure where i got this recipe... but i made them a few weeks ago and OH MY GOODNESS they are amazing! i've attached the chocolate version as well...
These are packed with a wonderfully rich and tart lemon flavor. If you like lemon meringue pie, you'll really enjoy these.
2 C cashews, soaked in water for about 4 hours
Zest from 3-4 lemons
Juice from 4 lemons
1/2 ripe banana
1/4 C raw honey
1/3 C agave nectar
2 C dried shredded coconut
1 tsp. pure vanilla extract
Drain and rinse cashews. Place all ingredients in a food processor and blend until smooth. Spoon out (about 1 1/2 T. each) onto mesh dehydrator sheets. I use an icing piping gun to make the shapes of little 'stars' but you can use a simple spoon.
Dehydrate at 115 degrees for 8-10 hours or until the texture you desire is reached.
Makes about 30

These are just like the lemon chewies, only this recipe is designed for the chocolate lover - me! These are a huge hit every time I make them - even non-raw skeptics like these.

Just in case you don't get to use them all in time, you can freeze lemon juice. I freeze it in ice cube trays to make quick lemonade drinks and to use in dressings.
I bought a 10-lb box of Meyer lemons, pretty happy with them. They were sooooo juicy and easy to peel.
I would peel and deseed 2 lemons, toss everything in the vitamix and mix some strawberries and bananas and ice.
Mmmmmm.
I got rid of the box in about a week and a half with my hubby.
I was also using them in green smoothies. :eek:

Lemon sorbetto
3/4 cup fresh lemon juice
3/4 cup water
3/4 cup honey
Mix all ingredients. Chill all ingredients. Prepare in an ice-cream machine.

WHen friends give you lemons...make lemonade. (I couldn't resist ;))
Save the zest in the freezer too! Adds lemony goodness to any recipe. (and full of bioflavinoids)
I love a lemon and agave dressing...with a pinch of red pepper for heat. It feels like a dessert even though it's salad.

One day I was at my friends and she asked if I wanted a glass of apple juice she'd juiced from her trees....of course the answer was yes....she then took out a baggie from the freezer and let it thaw while we visited. It was sooo delicious and cold still with some slushy ice parts in it. All she did was, juice her apples, put them in a freezer bag and lay it flat in the freezer. (this way it is about 1 inch thick and thaws quicker.) The juice was more brown but tasted like she'd just juiced it. I've never done lemons but maybe you could juice a few and see how it goes with just one bag.

you can also dehydrate your lemon rinds and then grind them to a powder... this can be used in your laundry detergent, recipes... anything or anywhere you want to add a lemony zing!

I have a great easy recipe for lemon cookies
1 cup cashews, soaked 4 hours
zest of one lemon
1/2 cup fresh lemon juice (approx 2 lemons)
1 cup dry shredded coconut
1/4 cup agave
Process cashews in food processor until they are pasty consistency
Mix all all other ingredients
Dehydrate for approx 12 hours at 105 degrees or more depending on if you like chewy or harder. They are great both ways! Enjoy!
I usually take between 1 and 2 tablesoons full and flatten into a cookie...you can also keep in a ball if you want

Thank you all for the great ideas. I ended up making rawstrength's sorbet for a potluck at work--was awsome, but the lemons seem to be EXTRA lemony so it was industrial strength. Will have to do half-strength on some of the other recipes with these.
My boss told me after the fact that these lemons are much stronger whenever he makes lemonade. Used the zest in the recipe, too as I understand it is quite edible so don't know if that makes a difference. There is just an awsome flavor/taste to these sunshiny fruits. Now I'm hoping for another motherlode to have more fun!
Aleesha, I have some of the sweetened juice left to make your cookie recipe--can hardly wait.

Thanks for recipes. I love these lemons and hardly can find any here in CO. I could use a tree perhaps! Lemon! Cheescake? Yum...just what my body would love but my figure would change as I am not in control so I don't do.
