Does anyone know how long dehydrated bread keeps?

I'm not sure how long its meant to be kept, or if it looses nutrients or anything, but I found that the softer breads needed to be kept in the fridge, infact even then after a week the buckwheat one I made smelt odd and tasted even odder :) but the ones that are hard and really dried well like crackers etc keep for yonks in a well sealed plastic container in the cupboard, infact I dont think Ive ever had any go off.

that made me laugh.. I forget that we all have different little words for things in our different countrys, I Live in England now, but I am an Ozzie and back home in Australia when you say youve been doing somethng for yonks it means a long time, or at least in Melbourne it did!
