Rhubarb

I have one plant...and its growing like crazy. What can I do with it? In the past any recipes I have used have called for a lot of suger...which I am now trying to stay away from. Any ideas??

Rhubarb goes nicely in a smoothie with strawberries and greens.

Juice the rhubarb, and blend the rhubarb juice with strawberries and bananas. Soooo good!
Also, you can marinate the rhubarb in honey/agave, sprinkle it with cinnamon and chopped nuts, and have rhubarb crumble.
