Raw Yogini

I just got this recipe out of Yoga Journal. I haven't tried it yet but certainly plan on it soon.
serves 4
3/4 c. pitted dates (soaked 20 minutes in 1 1/2c. water, save the soaking water)
1c. cashews (soaked 20 minutes in 2 c. water, don't need to save this water)
2 T vanilla extract
1/2 t sea salt
3 avocados (peeled, pitted & mashed)
3/4 c. raw carob powder (I'm sure cacao would work, too)
1 pint raspberries
1 T agave
mint for garnish
Blend 1/2 c. dates, 1 T vanilla, and a pinch of salt in food processor, when smooth, add mashed avo, process until smooth, then add the carob/cacao and 1-2 T of date water and blen into a smooth mousse. Set aside.
Combine cashews, remaining dates, vanilla extract and a pinch of salt and 1/2 c. date water and blend in blender until it's a smooth cream.
In a bowl mix raspberries and agave.
To assemble: 1/2 c. mousse on bottom, 1/4 c. berry mixture, then 1/4c. cream. Garnish w/ mint leaves.
