Watermelons are in season in this corner of the world, and last night we cut our first watermelon of the year. In Korea watermelons are a little smaller than in the states (yeah, they don't inject them with disgusting chemicals to make them unnaturally big). They look like dark green bowling balls. And they don't make any crappy :eek: seedless:eek: ones either, at least not yet, thank goodness!
Anyway, to celebrate our first watermelon of the year, last night I made a Curtis family favorite: Watermelon Soup! Dh is not even a little bit interested in the raw diet (although he's perfectly supportive of me), but he loves this soup. He had 2 bowls last night and praised every drop. Most raw soups I do not like, but this one is fantastic. It is a variation of a soup I found in a raw cookbook 2 years ago (can't remember the name of the book or the authors,:confused: ). It calls for several ingredients that we don't have, but here's how I made it last night:
Watermelon Soup
7 cups pureed watermelon
2 cups watermelon, diced small
1 large tomato, diced small
2 cucumbers, diced small
2 green onions
2 green bell peppers, diced small
1/2 jalapeno pepper, seeded and diced very, very small
1 1/2 tsp salt
1/2 tsp black pepper
Dh said he prefers it a little spicier, but it was perfect for me; just a little kick. We used up half a watermelon and there's another 2 or 3 cups of soup in the fridge that we didn't eat last night! Mmmm... Watermelon soup for breakfast? Maybe!:p
