Spicy peanut coconut noodles

I found this recipe while I was on my fast and just made it. It is the bomb! THe noodles made from thai coconuts reminds me of my old favorite passion of SAD pasta I used to like so much!

This recipe and site is so cool. It took a ton of time to make but definately worth it!

However, Note that you can probably cut all of the sauce recipe in half cause I have a ton of extra sauce. I am wondering however, if it will freeze ok to use again for a later time.

I'm not experienced with coconuts...can we use the same gadget on them like with do with the zuchinni noodles? The recipe looks great and I just know I would love it......

I've made coconut "noodles" by slicing the coconut into long thin noodles with a knife.

What is the galangal that the recipe called for?
Also french radishes? I wonder if daikon would be a good substitute?
