i'm having the most amazing experience. i'm taking a meditation class this weekend and next weekend. it's from 10-4 sat and sun.

yesterday at break the muffins and cakes came out for everyone and i pulled out my container with cut up mangoes and grapes. i ate and they all looked at my food (with that sort of envy)...

lunch came and they pulled out their sandwiches and i pulled out my kale salad with tangerines on top and a bowl of baby carrots.

i announced that anyone who would like some kale salad - come grab some. well everyone tried some! they ALL loved it!!!

at the afternoon break i brought out the leftovers from morning break and lunch and everyone hung around my food and ate!

then i told them... wait till tomorrow! my hubby and i left class and went to the market to get the rest of the ingredients for today. here's what i'm taking:

cut up fruit for morning break: mangoes, bananas, passion fruit, blood oranges, tangerines.

lunch: kale salad with chia seeds, sunflower seeds and cucumbers.
marinated mushrooms with garlic and olive oil.
jalapeno cheese sauce with cut up veggies - cauliflower, radishes, celery, baby carrots and mushrooms.

i'm so looking forward to showing them a little different kale salad every day!!! also opening their minds to the possibilities of raw eating.

next weekend... egg-less deviled egg filling stuffed in mushrooms
some kind of a dessert
kale salad - perhaps spicy??? not sure yet.

any suggestions? it has to be easy and good for SAD eaters to try.

have you tried Russel James's Wilted Kale salad with chipotle dressing? OMG, I could become addicted to it!

However, I have doubled the kale with the same amount of dressing to feed more people and its still awesome. The dressing is quite rich.

And yes I know the chipotle's are not raw, but its worth the burst of flavor to me.

I like this one:

Avocado Kale Salad

Serves 4

Ingredients:

1 head kale, shredded
1 cup tomato, chopped
1 avocado
2 tablespoons grapeseed or olive oil
1 tablespoon lemon juice
celtic sea salt, to taste
½ teaspoon cayenne

Preparation:

In mixing bowl, toss all ingredients together. Mush everything together (with hands) to created marinated/wilted effect on kale. This makes it much tastier and easier to digest.

Maybe a dip like zucchini humus with crackers and vegies? A simple sweet like doughnut holes or fudge balls? It's so wonderful to hear that you are sharing your raw lifestyle with willing people! So much nicer than trying to share with the unready!

Rich Cheddar Sauce
Adapted from "Rejuvenate Your Life" by Serene Allison

1/2 large red bell pepper
¼ c water
1 c raw cashews, sunflower seeds, or almonds
1 T tahini
2 T nutritional yeast
1 ½ teaspoon sea salt
2 teaspoons onion powder (or a small slice of onion or 1 tbs or so of green onions)
1 clove garlic
2 T lemon juice

Blend until creamy. Add more water if it is too thick.

then i dehydrated 7 jalapenos for 2 hours and since i could not stuff them... i tossed them into the FP and blended them up. it was amazzzing!!!

not sure what i'll make but they are all excited to find out what it'll be. they were verrrry receptive to it. except one woman... a diabetic who is pretty overweight... she told me that protein powder is much better than greens. i told her i disagree but she is welcome to believe what she wants. if she would like, i can show her documentation to prove otherwise. she avoided me from then on.

i'm cool with it. i'm here to convert anyone... just to share and if they want to... they are welcome to the recipes!
