I like making pates, but I don't want to use fresh veggies, because of the moisture and the softness.

What veggies should I dehydrate which will come out crunchy in order to replace crackers when I make my dips and pates?

I've heard that kale chips are good :)
Try searching for it, there were some nice recipes too

Have you ever tried Alissa's veggie crackers? They are filled with spinach, broccoli, carrots, etc and are so good. My SAD friends always eat them up when they come over.

Yeah, Alissa has some great cracker recipes in her book and lately I've enjoyed Ani Phyo's black sesame bread recipe whic is really more like a cracker, just not as crunchy.

I made Alissa's pizza crust (the medium difficulty one), but my dh left it in the dehydrator and it got super crunchy like a cracker (I had it divided into 2 crusts).

This was so good that I didn't want to make the pizza - I ate both crusts with avocado & tomato or plain! :) Super delicious - one of the best recipes I've made from her book so far.
