Well, actually it's a blend of little sprouts that includes alfalfa, but I don't think any of the sprouts are supposed to taste bitter. I just sprouted the most beautiful batch ever -- I let them go a day longer than usual and they're lush and green. They spent about a day and a half in the light (kept them covered with a tea towel for the first three days, or maybe it was two).
They're gorgeous, but kinda bitter. Maybe that's just how they're supposed to taste... but I've read that growing them in the light can make them bitter. On the other hand, if they don't get any light they won't be that lovely green and they won't have much chlorophyll. Has anyone found the perfect balance?

I've done other batches of the same seeds, with less growing time and less light, but I think they all tasted a bit bitter.

Thanks!

Maybe it's the mix? I use one from NOW that I think is called "spicy" but it's not. I guess you could call it bitter, though, compared to all alfalfa sprouts. If we are using the same mix, I think it's just the seeds giving the taste some character. Mine taste about the same regardless of whether they get very green or not.

It's the exact same mix, I think -- they call it zesty. I don't find it especially zesty but I haven't been able to get a hold of just alfalfa or clover seeds so I haven't really compared.

Thanks for the tip -- maybe it's the fenugreek seeds.

I ordered it at iherb.com, and they also sell bags of NOW plain alfalfa seeds. I just wanted to try the mix. Yes, I don't find it zesty, either, but I like it enough.
