I ate tonight at Ahimsa in New Haven. (http://www.ahimsainc.com/) What a wonderful place! It's a vegan restaurant with several raw options.
For an appetizer I had their raw samosa; the wrap was coconut mint, very creative and delicious.
For the entree I had the eggplant manicotti. The thinly sliced eggplant was marinated (I'm guessing in apple cider vinegar) and wrapped around a nut cheese. The highlight of this dish, however, was the "chunky marinara sauce". It had sun-dried tomatoes, kale (?), onions, agave, and I don't know what else. It was savory and flavorful and left me feeling very satisfied.
They told me it's pretty full on weekends, but there were only four tables in use on a Wednesday night. If you're in the New Haven area, let's help keep these guys going. You won't be disappointed.
