Eggplant.....gross!!!! I made the eggplant pizza....

Ok, I didn't like anything made with eggplant before I went raw. I am not sure why I thought that maybe I would like it now!

I made the eggplant crust pizza in Alissa's book. The topping was fantastic even before I dehydrated it. I was licking the spoon! But dehydrated eggplant???? What was I thinking????

Eggplant needs to be marinated to taste good. Do you have dehydrator?

Ya, that is why I have stayed away from that recipe...!

It is good to know about the marinating of eggplant. I will have to try that before I completely give up on it! :)

I have to say that, that is the only recipe in Alissa's book I haven't liked....my dog wouldn't even eat it, let alone anyone else.

I was the opposite I loved anything with eggplant before I was raw, so I thought Id like the recipe in alissa's book, and I hated it as well, eggplant tastes so different raw to cooked, but then I tryed soaking it in differnt things and drying it ( ie the eggplant bacon as already mentioned)and I loved it, mind you if you hated it cooked I dont hold out much hope for you likeing it raw :)

Thank you guys! So it wasn't just me!!!! That makes me feel much better.

I may try the raw bacon/eggplant some time in the future. Right now the thought of any more eggplant in the house makes me ill.

Gosh! I LOVE anything with eggplant. As far as I know it has very little nutrition, but I sure do love it, esp the pizza. I don't like heavy pizzas with nut/seed crusts, that's why i love the eggplant pizza so much! To each his own! :D
