...is there one that you use? I have a real "texture" issue and don't care for shredded coconut. Some of the cakes and cookies call for it. I was wondering is it there as a binding agent, just extra volume and taste? Or maybe I should bite the bullet and try it in a delicious raw cookie. Like I tell my son: try it, you might actually like it.
Any and all thoughts appreciated!

Try grinding sunflower seeds.
Maybe you can try raw carrots. Also, I saw, on another site, almonds.

It depends of your recipe. If you are good with nuts, you can use cashew, macadamia nuts or white almond (if you can removed the piled easy after soaking for two days, but you need to change the water often). Sesame seed also and i love the suggestion given to you. You could use a nut butter as well or a seed butter. Hemp seed could work great.
Again, it depends of your recipe!
All the best!
