Have you tried using this brand for this? Chad Sarno has a recipe -

and it looks great. The cheese looks so white and cheeselike. Yet he recommends New Chapter Probiotics. I bought these and tried it and as soon as I dissolved it in the water the water turned very red. Apprantly the color of the probiotics is pretty red/pink I guess. Well my cheese turned out with a slight pinkish cast - totally different then Chad's picture. Hmm. Any clear colored probiotics that are good and non-dairy you've tried? Thanks.

i haven't made nut cheeses before but when i make nut based yogurts i usually use a klaire labs probiotic powder. i don't think it will tint it; my yogurts are usually tan or colored from fruit though so i don't know for sure. i can try dissolving it in water later if that brand is one you have access to.

You can also use rejuvelac to make cheese -- my first batch is fermenting right now so I don't know how it will turn out but it's supposed to be quite easy. If you do a search on this board or just on the web in general you'll get a lot of info. Probiotic powder sounds like a nice alternative -- I'm a little freaked out about fermenting stuff, but it's an interesting experiment, and cheap.

I use Country Life Power Dophilius to ferment my cheezes - It is white so it won't turn anything any weird colors. :)

can you guys post a few cheese recipies? I have no clue where to even start=)

really want something mild that I can add hot peppers to or something....as close to real cheddar in texture as I can get!:rolleyes:

Thanks guys. Maybe I'll look for a different probiotic. I like the recipe, maybe the color doesn't matter so much, just when serving it though. If I make a cheddar cheese and add red bell pepper it won't matter anyways.

debilana, you can make cheeses without fermenting. There are quicker recipes, I just wanted to see how realistic it was when fermenting the nuts.
