Yucatan Fruit Salad
2 c Fresh Pineapple, cubed
1 small Jicma, peeled, cubed
1 large Mango (not too soft), deseeded and skinned and cubed
1 tsp Jalapeno pepper, chopped ( I use a whole one, because I like it hot)
2 Tbl Cilanto leaves, minced and tightly packed
1 Lime juiced
1. Put all chopped fruit in a bowl
2. Put the jalapeno pepper through a garlic press and press the juice onto the fruit, discard the fibers left inside the press
3. Chop the cilantro leaves and add to remaining spices and Chill
Jicama Sticks - this looks pretty when set up like a pinwheel
1 Jicama, peeled
2 Limes, divded use
1.5 tsp chile powder
1/8 tsp Sea Salt
1. Slice the jicama into sticks, about 1/2" thick by 2" to 3" long.
2. Juice 1 lime and mix into the kjicma in a medium sized bowl
3. Mix the speices together and sprinkle on a plate. Dip one end of the kicama in spices and place on a platter with kime wedges. Serve chilled
I have a feista coleslaw, but it is a two step thing, so let me know
