crazy question but can corn really be eaten raw? I have a raw recipe for whole kernel corn this is all new to me :p

Yep! Lots of people eat it straight off the cob and love it! Me, I find it a bit too sweet and too starchy at the same time. BUT...I have cut off the cob, tossed in a little olive oil with some sea salt and a little garlic/onion powder and put on the dehydrator for an hour or so and it was tasty to me that way.

I think that even rinsing the cut corn and marinating for a day in the fridge might cut some of that starchiness too. But try it...you might like it as-is!

I love corn cut right off the cob! My favorite corn recipe is a whole tomatoe cubed, corn of two cobs, a few raw black olives with a dash of cider vinegar.

I'm from Iowa, though. :)

One can pretty much take whatever veggies are in the fridge ~ zucchini, okra, tomatoes, corn, celery ~ cut, chop, throw in a bowl, add some tahini dressing and ~ good to go!

I also add shredded zucchini and rocket (which I think you Americans call aragula?). Yummy

Zucchini would be a good addition. I think I have an unresolved past life issue with zucchini, though. I buy them almost every week and every week I throw the sad, neglected, overripe zucchinis I bought the week before in the compost pile. Sigh. If only they had more personality. They just don't jump out of the fridge like tomatoes and corn do.

I've never tried arugula/ rocket. Sounds a little ominous. But I'm willing to try anything once.

I love corn right on the cob.

When I grew it in our yard, I would just go out and pick a few baby ears, and my granddaughters and I would eath them right there, with nothing on them, freshly picked and warm from the sun.

Corn is best when eaten within 10 minutes of cutting, that way there is no starchy taste. But it is suuuuuuppppper sweet. Especially when you eat the baby ears, about 4 inches long. YUUUMMMYY, they taste like candy, my granddaughters loved them, no need for candy in our house.

So, I also love corn on the cob, with a little olive oil and sea salt, it is sooooo good.

and I use it in corn enchiladas, taco salad bowls, taquito wraps, corn bread, corn chips, tortillas creamy corn chowder, and all of my cream soup bases.

so, there are tons of ways to use corn, even without a dehydrator.

PS, we had (notice I say "HAD") arugula growning wild in our gardens, not sure how it got there last year, but alas it did. I hate it. It brings slugs, and tastes terrible(to me) and it stinks.

Now, I know that many people love it, as it is sold in our little gourmet market for $2.00 for a baby amount.

It tastes a little like mustard greens, but with a weird heavy undertone, kind of like leather smells, when you are tanning it. Or maybe burning hair, or nails.

Although I love mushrooms, which taste kind of like a spongy moldy fungus. So, there you go.

I love making corn crisp flat crackers in the dehydrator, (corn off the cob, onion, flaxseeds, cumin)

my favourite is crackers, avacado, tomato salsa , alfalfa sprouts.

a nice mexican taste.

my salsa recipe is

1 1/2 cup tomatoes
2 dates
2 cloves garlic
sea salt
1 tblsp nama shoyu
2 tblsp olive oil
pinch cilantro (to personal taste)

If you like a bit of heat add a dash of cayenne pepper or jalapeno

Corn Salad

4 ears of corn (sometimes I get cute and mix yellow and white)
1 stalk of celery, chopped
1/2 red onion, chopped
1/2 red bell pepper, chopped

1 tsp chili powder
1-1/2 tsp sea salt
1 tsp minced garlic (this is really your choice)
pinch of red pepper flakes or 1 jalepeno pepper - your choice
1/4 cup sesame oil

Cut the corn off the cob, corn, and then I run the knife on the cob to get the milk (from the old fried corn days). In a large bowl, combine the corn with all the vegetables and mix. Add the spices. Strir again. Add the oil and stir thoroughly. Make about 2 cups.

Tomato Corn Jubilee
2-3 ears of corn -cut from the cobb
1/4 c Green onion
1/4 c Red onion, minced
2 medium Tomatoes, seeded and chopped
1/4 c lime juice (abt 2 limes
1/2 c avocado, cubed
1 garlic clove pressed
freshly cracked black pepper to taste.

Put all the ingredients into a medium bowl, toss them well. The avocado will blend in creating a creamy sauce. Serve on chopped spinach or ramine with a few sprouts on the side.

Both are quite good.

After reading this post yesterday I went to the market today and got some ears of corn and I was going to make the corn with the olive oil and the garlic and onion powder then I wanted an avocado so I put the garlic and onion powder a little sea salt and some pepper in the avocado mashed up and spread it all over the corn really thick and that was my dinner so yummy.
