I have a big one in the fridge- and I don't have a dehydrator.

I saw a non-raw recipe somewhere on the web for eggplant burgers...you might be able to tweak that and make some sort of raw eggplant patty or something. Also, while I've never made it I have read a lot of the eggplant bacon on this site (probably can find the recipe in the search link). Of course I'm craving things while I'm attempting to drink juices and smoothies. I think it would be good in a raw lasagna or chopped up with tomatoes/green peppers, etc. and put into some sort of tomato/pasta sauce and served on top of raw "spaghetti" noodles.. I guess I'm craving something sort of Italian at the moment.

Let us know what you come up with.

Lavendar - why are you torturing yourself?! I could never stick to any kind of fast/feast whilst browsing the raw food prep section of this site! You are dancing with temptation.

Sorry to hijac the thread. I have no idea what to do with eggplant. I used to love it cooked . . . but raw? I wouldn't know what to do. I'll be checking back to this thread for some recipes :p .

stuffed enough eggplant

2 large dinner portions(saved half mine for tomarrow)

good and hearty, warm italian comfort food!

Ingredients
1 large eggplant, halved, with the seeds scooped out
2 tablespoons olive oil
1 teaspoon salt or to taste
1 cup sliced mushrooms, slice em chunky
½ cup artichoke hearts, softened in oil
¼ cup chopped black olives, used bottled version, outa raw
1 tablespoon olive oil, tossed well with last three items
1 small yellow squish( thats what we call squash;), chunky chopped
2 tablespoons minced onion
½ cup diced yellow and red pepper
1½ tablespoons oregano
2 tablespoons olive oil, tossed with above 4 items
1 cup ricotta nut cheese, recipe follows
2 cups macadamias
1 cup loosley packed fresh basil
2 small cloves garlic
½ lemon , squeezed
salt to taste
½ cup water added to cheese fixins as needed, jsut to keep blades turning
1 cup your favorite marinara sause
1 sprinkle crumbled onion bread, for topper

Preparation
half and lightly core 1 large eggplant. rub with olive oil and salt, place in dehydrator for 4 to 6 hours( i put mine in in the AM) chop and mix next 5 items. cover and put in the fridge…chop and mix next 5 items and place in the dehydrator for the day with the egg plant. mix next 6 items and cover and place in the fridge. mix up your favorite marinara( mine is ani phyos) or just chop some fresh ‘maters. If you have any bread made you can crumble it on top of the assembled eggplants for the last bit of dehydration to warm before serving.

Assembly: fill eggplant with alternating layers of cheese then, squish mix, then mushroom mix then marinara and bread crumbs, place in D until warm through about 1 hour.

serve with spinach salad.

I miss WFs marinated tofu that they have at the salad bar so my 10 year old and I have successfully subbed eggplant for tofu. We peeled it and cut it into cubes. We put it in a large canning jar and poured the following marinade over it:

This is from an eggplant recipe I posted awhile back:
I squeezed a lemon, sesame oil, Bragg, a little garlic, and a touch of sweetener. I cut the eggplant in 1" cubes and marinated. everyone loved it! I added it to my Nori and lunch and my dinner salad last night.

But yeah, you need a dehydrator (or if your oven goes below 120 - try that out to crisp up the bacon)

My oven goes down to 100, so I can use it, I might try some of these ideas. Thanks!
