Have a cabbage and would love a recipe that doesn't involve apple cider vinegar. I looked through Alissa's book but none of the cabbage recipes are appealing to me at the moment.

I love to use cabbage leaves as wraps and stuff with shredded carrot, zucchini, and avo. Simple goodness.

Here's one that I might even make for lunch today. Shred some cabbage up and put in a bowl. Sprinkle with sea salt and a few drizzles of lemon juice. Massage with your hands for a few minutes, then drizzle on some raw sesame oil (if you have it, otherwise use whatever.) Then a few generous dashes of chili powder, cumin and curry. Toss it around and then you can eat it after a few minutes or wait a while for the flavors to blend. I never get that far.

It's probably not raw, but you don't use much---make a coleslaw dressing out of a small scoop of Vegenaise from the hfs, a few drops of a nut milk, and some agave or honey, if you like it sweet. Add a chopped apple, or a piece of chopped pineapple with the cabbage, and voila-simple & delicious coleslaw.

I like using cabbage leaves as "chips" to dip in my favorite dips, like guacamole, hummus and salsa.

I like to shred up napa cabbage, add bean sprouts, chopped green onion, a bit of shredded carrot. Roll in nori sheets.. You could add raw kimchee. I sprinkle some braggs on it before rolling. Dip in your favorite raw dipping sauce.

WFs has this awesome poppy-seed coleslaw. I'm guessing at the ingredients-but it's basically shredded red and green cabbage, a little carrot for color, and the dressing-which I think is: olive oil, vinegar-but you could use lemon juice, poppy seeds, a dash of salt, and a little sweetener.

or you could do a search for raw kraut. Kraut is my ALL TIME favorite raw food. I use it in nori with carrots avo, scallions, white miso and wasabi. I have to fight to keep my SAD family from stealing it when I am not looking. :p

Agreed make some kraut and some kimchee!!
but wear gloves.. I learnt that the hard way after a night of burning hands!! :eek:

I made kimchi today!! yum!! I used napa cabbage but added some regular cabbage- my napa was a bit on the small side. I added some garlic.. I love it. Tomorrow I will be making raw sushi! I bought a cauliflower and some beansprouts. I can't wait..

Head of cabbage? Ever tried Cabbage rejuvelac beverage? Shred cabbage and place in a jar of water (I used distilled but tap water works too). Put the lid on the jar and let sit for 3 days. Drain off the liquid and drink it. It's not disgusting, I promise. I think it tastes a little like lemonade and it's loaded with healthy cultures.

I like stuffed cabbage rolls. I usually just throw stuff together and dont really follow recipes. I know there are some taco meat recipes on the board so just vary the seasonings a bit to make it a little more italian. I prefer napa or savoy cabbage but any will do. You can soften cabbage leaves in the dehydrator. Here is a link with directions for that

Then I top it with marinara sauce and dehydrate it or not. Here are some pics of some Ive made in the past. I also love Alissa's collard rolls.
