View Full Version : Collard greens - how to marinate?

I have some collard greens, and I usually juice them or dehydrate them into plain crisps, but I want to know how to "marinate" them so that they are chewable. I think I heard it has something to do with them sitting in the vinegar that softens them up and lets that vinegar acid to eat away at them, but I need some tips/advice recipes.

I was thinking to just chop them thinly, put 2 tbsp or so of vinegar in there and stir it around and let it sit in the fridge, and then later I'd add some avocado and spices (or maybe add the spice with the vinegar) and then eat. I just don't use oils....

Lemon juice will work too. The juice of one lemon for two pounds of chopped collard greens. I usually marinate along w 6 minced green onions and a little oregano. When it is ready, I usually top with a little tahini dressing ~ Cathy

i add them to my kale salad all the time. just chop them up and add some olive oil, apple cider vinegar and a little salt. rough it up with your hands... and EAT!

I'v been marinating mine for 24 hours and they are still not soft. :(
