I want to make my own bars, but I don't know what to do with them once I put the nuts and dried fruits in the food processor. Are these typically dehydrated after they are mixed together? Does Lara dehydrate her bars?
How do you shape and store them. Obviously the store bought ones are super convenient being individually pre-packaged for you, but I'd rather have something fresh and convenient.

You know, i constantly experiment and make my own. I don't have a dehydrator though.. so i just put them in the food processor. then i form "bars' out of them, put them in a foil wrap and stick them in the freezer. so in the morning they are quite firm and nice! i bet it would be even better with a dehydrator of course but oh well :)

I've not attempted to make those, mainly because I don't much care for them. When I have made other things from scratch, with no recipe, I start by combining the ingredients listed on the package and testing until it tastes right. I have made some candied walnuts this way.
To shape the bars you can use a flexible scraper to form them in the shape you want. This is how I make the onion bread.

I make my own bars sometimes, I form them by using a ring cookie cutter that's open on both ends, and compress some "dough" inside and with enough pressure it will hold into a cookie shape.
I made chocolate mint ones with dried coconut, dates, cacao and mint oil.
