Dehydrating potatoes & they are turning black!

I started up my dehydrator again tonight and I wanted to do some potatoes and they are turning black, what do I do?

Use sweet potatoes instead. They're better for you and won't change colour.

Presoak in a little lemon juice first

then use EVOO and herbs to season
