I just put them in the dehydrator so I don't want to get to excited and give the recipe, but when I was making the batter my fiance loved it, I told him I was trying to make a sweet cracker and he stuck his finger in it, licked it, thought for a moment and said "it's a graham cracker! you're really getting good at this!"
so... I will let you know how they turn out, and if they're post-worthy I'll give the recipe once they're done.... cross your fingers!

i have never tried this but want to soon!
graham crackers
1 cup pecans
½ cup almonds (or more pecans)
¼ cup coconut flakes, finely ground
1 Tbsp. mesquite
2 Tbsp. raw honey or agave nectar
3 soft pitted dates
1 tsp. vanilla
dash of sea salt
In a food processor, grind pecans, almonds, coconut and mesquite, until it reaches a flour-like consistency. Add honey/agave, dates, vanilla and sea salt, and process into a ball of dough.
Divide the dough into three equal sections, and then flatten each section into a rectangle or square, approximately the same size as the container you’ll be using to make your layered dessert. I used one about the size and shape of a standard loaf pan.
Then, mark the flattened dough into sections with a knife and poke holes in each section, like on the original graham crackers.
Then, the cookies are ready to “bake.” I put mine in my dehydrator for roughly 24 hours to make them nearly crisp, although they will soften once layered with the vanilla pudding filling.

They didn't crisp up like I wanted them to, so I'm going to substitute maple sugar for the liquidy sweetners I added BUT THEY TASTED SOOO GOOD!
Once I get the crisp factor up I'll absolutely post the recipe, I should be making another batch tommorrow...

Oh, me too! My son would LOVE these, I hope :lol:
We're still new to raw - he's 2 years 8 months and is so far not very interested in ahything I've dehydrated - I even made almond cookies shaped like stars and chocolate macaroons!

Ok got my maple sugar in, remade the recipe and I think it's working, when I check them in the morning I will let you guys know, but they taste good so far... and they look so convincing, all that I need is some cinnamon sugar to sprinkle on the top lol!
