What should I substitute in recipes instead of almonds? What nut has a similar density and flavor?

Do you like walnuts? Pecans are an awesome flavor. Cashews seem most like almonds to me and so tasty when raw. Any particular recipe?

I hadn't bought almonds in about 6 months because of all of this nonsense. I finally bought 10 pounds from CA that had NOT been pasteurized. They sprout and taste divine, so I'm pretty sure they're okay. :)
That said, I usually don't use almonds in pates anyways. I tend to like almonds and cashews for things like fettucini alfredo-type sauces and walnuts, pecans and sunflower seeds for pates.

Yeah, just about any nut will work in pates (I recall Alissa stating that her Carrot-Pecan Burgers actually started out using walnuts (yes, before she named them that :p) and ran out and subbed with pecans and they turned out even better! Sunflower seeds are great for pate's too and a LOT less expensive than nuts!
As for pie crusts, I'd say walnuts work well if you're okay with them. Pecans too...oh heck...what Theogirl said! Oh...but as for texture, I'd say that either Brazil nuts or hazelnuts probably but the flavor will probably be more distinctive since almonds have such a mild, almost neutral flavor.

Pecans are great for sweeter dishes, sunflower seeds are all around good and have that slight nutty flavor, you could try brazil nuts too those are delicious and don't need to be soaked as long as almonds
