When I eat only half the avacado I take the pit out and put the other half upside down on a small plate....of course the avacado meat still has the outer skin on it. If it does get a little brown then just lightly scrape it off....it's still delicious and wonderful....actually I wouldn't even bother to take the brown off but if it bothers you, I would.

If you squirt a little lemon on it, that will help a lot.

I use the half without the seed, then wrap the seeded half in plastic and refrigerate. The seed seems to keep the flesh from browning. Sometimes I just eat the whole thing (except the seed, of course) :o

Yep, you need to keep the seed in to keep it fresh. If you make guacamole, you can keep that fresher but putting in the pit until you serve it.

You can order vanilla beans from raw food websites or on eBay. Mint leaves are sold in some produce markets, health food stores and gourmet markets.
