I got myself some ears of corn the other day, so now I have a tuppy full of corn. What should I make?? I was thinking about doing corn chips or wraps... has anyone tried Alissa's recipe for the chips yet? What did you think??

I did but didnt do the optional carrots and I added some cumin, cayenne, and a sprinkle of o.j. They were really good but I def recommend adding the spices.

I generally just take the corn off the cobs, chop up some tomatoes, spice it up however I'm in the mood and eat it. Sometimes I'll add onion and peppers too.

Same h"ear"!! Although I do sometimes eat it right off the cob, especially when it is in season. ~ Cathy

Oh yeah, nothing like sweet, still warm from the sun corn just plucked out of the garden!!! I'm getting hungry!!!

Someone posted this a few Months ago. I plan to try it this summer.
cheezy corn chowder
1 c corn kernels
1 clove garlic
1 T onion
1/4 c cashews
2 T nutritional yeast
4 baby carrots (or 1 regular one)
1/4" ring of red pepper
2 T olive oil
1/2 - 1 t psyllium (depending how thick you wish chowder to get)
1 t cumin
1/8 t nutmeg
1 T parsley
1/2 t salt
grind pepper to taste
2 c water
blend in hi speed blender till very creamy
add :
1/4 c more corn kernels
1 T parsley
and warm up on stove till warm enough to eat.
bowl up and garnish with additional minced parsley & fresh ground pepper
enjoy!
you can use fresh or frozen corn - i used frozen today because it is winter
and there is no fresh corn available. i didn't use miso, but a light miso
would easily replace the salt & add a deeper dimension of flavor.

I was going to make corn chips the other day and the recipe called for frozen corn. One of my co-workers questioned me on that (looking out for me :) ) because she said that frozen corn (from the store) is blanched. So I didn't buy any and just planned to buy a lot this year and freeze my own.
Does anyone know for sure?

She's probably right. Especially if it's a well-known brand like Birds Eye or such. I try to get organic frozen corn on the rare times I do get it. If you are in doubt with this or any product - contact the manufacturer. They will tell you their process.
This summer buy a bunch, cut it off the cobs and freeze it for yourself. I've done that - not blanching it and used it within a reasonable time and it was fine...
And don't you love others looking out for your interest? I know it makes them feel good maybe telling you something you didn't know, but it makes me chuckle. Those that aren't Vegan are always telling me about this or that that they read or heard. Gosh, you would think they would incorporate that into THEIR lives...

Lucy, yes, I agree what you said about other people. They are very concerned with what I eat but don't seem to care enough about themselves! Funny...
Thanks for the info, I do plan to freeze a bunch myself this year.
I love Rawvolutions summer corn salad. But you will also need a thai coconut too!

Oooh I reccommend you eat it fresh!! All juicy and sweet :D yummm.
Add it to a salad like VFL suggested (If you want to that is!) I think fresh corn is too nice to put in dehydrator recipes :P xxx
This salad is great by itself or with mexican flax crackers
Corn Salad with Cilantro Dressing
Salad:
4 fresh Corn Cobs, stripped
1 diced Red Bell Pepper
1 Avocado, cubed
Dressing:
1 minced Garlic
1 small Onion
½ Jalapeno Pepper
1 small bunch Cilantro
1 Lime, juiced
½ tsp Sea Salt (or to taste)
2 tsp Flax or Olive Oil
½ tsp Cumin Powder
In a medium bowl, combine the corn, red bell pepper & avocado. Set aside. In a blender, Vita-Mix or food processor, combine the dressing ingredients. Pulse until the cilantro is finely chopped. Mix the dressing with the salad. Enjoy!

I liked the texture of Alissa's corn chips. But next time I definately won't add the carrrots. Corn is already very sweet--the carrots made it too sweet imho.
You could also use it as a layer in a mexican lasagna.
