What sort of fabulous things can I concoct with these?

So far I have been LOVING coconut oil/butter-- making chocolate coconut balls with some cacao nibs, coconut oil, agave, and nuts or raisins (depending if I want crunchy or chewy) and making tropical breakfasts (pineapple and banana chunks with a bit of coconut oil poured over them... Simple but gooooooood).

Well... It's time to graduate to the real deal!

I remember feeling compelled to find young coconuts because so many recipes that made my mouth water called for them and now I can't think of anything to do with them! :o

Check out Asian markets in your area for young coconuts for a very cheap price. You will be shocked. I also bought a Coconut Knife, you can search for here with link, at Asian market for $5.99 to make holes to remove the "water" from coconut. I love it and worth the expense to me. I'm still working hard at opening up the coconut even seeing demos, etc. It's a challenge but hey part of learning however that takes.

coconut meat suggestions:
smoothies or freeze for future uses you discover later

Did you buy the "coconut oil" in solid form? Kind?

Thanks.

I eat super simple and thinking coconut oil for skin and maybe eating.

Thanks! If I investigate, I could probably find a ton of asian markets in my area. Maybe there is still hope of finding dragon fruit around here too!

I buy solid coconut oil from whole foods-- it's "spectrum" brand (I was very careful, as they offer both refined and unrefined oil) and I have noticed that there are some regulars on the board who use it so I am pretty sure it is ok!

I melt it in a bowl over another bowl filled with hot water (sort of a makeshift double boiler) and if you have a dehydrator you can melt it in there!
