I just took these out of the dehydrator and they're beyond good- cheezy, little spicy, trademark orange... and RAW!
The original recipe is from goneraw.com, I added a few things to it... and after a few hours in the dehydrator I scored them into little squares with a fondant cutter I found at Hobby Lobby, I'll post pics soon...
* 1 C Sunflower seeds (soaked 4 hrs and dehydrated)
* 1 C Brazil nuts (soaked and dehydrated)
* 1 C Almonds (soaked and dehydrated)
* 1 big tomato
* 1 cup red pepper, diced *I used a whole red pepper*
* ¼ C ground flax *I left this out*
* 1 pinch cumin or to taste *I used about 1 tsp Cumin*
* 2 teaspoons salt or a bit less to taste *I used at least 2 tsp salt*
*I added 1 Tbsp taco seasoning*
*I added 1 tsp onion powder*
*I added 1 tsp garlic powder*
Preparation
Process all ingredients and spread on teflex or parchment paper as thin as you like, after a few hours score with a pizza cutter and leave until dry on top then flip and leave until crispy (all day!) then eat eat eat!!!

Wow, Rawererin, you must be in my head!
Went into the pantry last night to get some flax seed and saw that big red box of cheeze its (my SAD husband loves them), and thought to myself "yummy, i want some, there has to be a way to make a raw version of these"...they'll be in my dehydrator tonight!

I didn't have Brazil nuts, so I soaked hazelnuts instead..When I sign off the computer I'm going to make these & put them in the dehydrator..
Just before logging on I finished putting a batch of faux Ritz crackers into the dehydrator..I didn't have walnuts, so I used pecans instead..I'm wondering how the bitterness of the walnuts versus the sweetness of the pecans will effect the final taste??..
Anybody have any thoughts on these two substitutes??..This is the first time I will have made either of these recipes..
I can't wait to taste both of these crackers..

Yes, after soaking the nuts you spread them out on the mesh screen and pop into the dehydrator. Probably the key here is to dehydrate the nuts until they are really crunchy.

Well, I just popped two trays of these into the D and let me tell you - the "batter" it out of this world! OH MY GOSH!!! :eek: It's been a long while since I've eaten the SAD/CRAP Cheese Its but this tastes (from what I can remember) an awful lot like it. Really, really cheezy tasting. I did not add any flax nor any taco seasoning or garlic powder. I also let it process until really smooth and then spread out onto the teflex sheets. WOW! Just the batter was awesome. I can imagine what the crackers are gonna taste like!
I think we have a winner here!!! WOO HOO!!!.

Something about sunflower seeds and red peppers. That combo is really good!!!! WOW!!! And the Brazils and almonds added to it! WHOA!!!

Whoa! These sound awesome - I'm going to have to try these! I've been having such fun with my dehydrator anyway. I never was much of a baker with cooked food, but doing this dehydrator stuff to compliment all my fresh food is right up my alley.

This morning I scored mine and had to take a sneak taste test! WHOA baby! They are 'da bomb! Really, really good! And they weren't even crunchy yet. Getting there. Oh so good!!!

These are so good. I am not sure that I got my consistancy just right and I had to make a different nut substitution but these are soooooo good.

At lunch today I snuck a couple out of my D and WOWZERS!!! These are the bomb.
I was thinkin the next batch I make I'm gonna put half the salt in the recipe, then after they are spread on the tray, sprinkle the remaining salt to even resemble MORE the cracker itself. They are so freakin' good!!!

The next batch I make I'm going to cut all the nut amounts in half and replace the missing half with buckwheat so hopefully they'll be more crispy... right now you can definitely tell they're nut based lol!

The only other difference is that I spread the "cheeze" mixture onto nori sheets before dehydrating. tastes just like cheese and crackers. The trick here is to spread the cheese pate really thin so that they come out of the dehydrator really crispy and tasty!!

The nuts (seeds) I know I dehydrated at least 12 hours. Probably more. Also the sunflower seeds I did more. I usually do these overnight...not that I sleep 12 hours! But you know what I mean. I start 'em after work, then dehydrate while I'm sleeping...

I am dehydrating brazil nuts and sunflower seeds for this recipe. How long should they be dehydrated for?
AND, are soaked and dehydrated nuts OK just in the pantry for as long as raw nuts? I soaked and dehydrated some almonds a couple weeks ago and they smell fine. How would I know if I shouldn't eat them??

A couple weeks they should be fine. You'll know if they've gone bad. They'll either get bugs or will look and/or smell funky! :p
I just made these up, but my batter is very thick - too thick to spread. I made it right to Erin's recipe on post #1, using her additions. I did add the 1/4 cup flax.
Being pretty new to this - do I simply add water until spreading consistency? All help appreciated - thank you! *Ü*

Well, I'm sure you figured it out by now, and I hope your crackers came out ok? Adding water should have done the trick.
I am going to try these as well. Ever since the mock turkey, I'm sold on Brazil nuts. But I will try and make this recipe without dehydrating the nuts first, just soak them.
I'll let you know, how they turn out. :) Not that I have tried the other way to compare it to, but at least I will be able to tell you, whether they are edable or not. :)

My husband told me, "Every time you make a new recipe, I love it more than the one before!" (in reference to your crackers).

Ok, so I made these, and yes, I can tell they do have a taste like cheeze-its.
What I'm wondering is, what does soaking the nuts and then dehydrating, and only then using them in the recipe do? I get that they are supposed to be crunchy, but why? They are mixed again with wet ingredients and have to be dehydrated again anyways.
I also don't like the aftertaste that these have for me, and I believe it's the sunflower seeds. I wonder, if substituting maybe buckwheat for the sunflower seeds would do the trick?
I also omitted the flax seeds, and the crackers came out to fragile. They tend to fall apart very easily. Since the recipe doesn't ask for much flaxseed, I will add it next time.
The recipe is definitely worth working on. :)

Thanks rawererin! These are good! I made half a batch using your modifications, but adding 1/2 t. of powdered turmeric. Putting the recipe in my keeper file. :)
Mine aren't very pretty. I made them so thin that by morning they were to dry to score. Had to break them into chunks. Oh well, next time. I doubt these will last long enough to share.

I am eating my second batch of these crackers - love them. I did not dehydrate the nuts and sunflower seeds after soaking them, and they turned out great - very crispy.

Soaking and dehydrating releases the enzyme prohibitors. The nuts become more digestable.

yes. I was confused in the beginning too. It didn't make sense. But now it does. I don't like eating soaked nuts unless they've been dehydrated again. But for various recipes soaking and using are ideal.

I've been making a batch every 3-4 weeks. One of my non-raw friends with a dehydrator makes them also. Every one loves these little crackers. :)

I couldn't find any "taco seasoning" that didn't have things I don't want in it, instead I substituted with:
1/4 t. coriander
1/4 t. cayenne
1/2 t. paprika
1/2 t. chili powder
I also used the other seasonings rawererin used:
1 tsp cumin
1 tsp onion powder
1 tsp garlic powder
I also add:
1 tsp turmeric
1 T. nutritional yeast
Like the OP, I leave out the flax. The flax would make the crackers stronger, but it does hold together okay without the flax.

:) I started making these a year ago, back when I had just gotten a dehydrater, so I made them like the OP did. Back in those days I thought flax had an odd flavor and it stuck to my teeth. My tastes have changed since then, now I like flax in crackers. I have not made these in a couple months. Next time I will add the flax to see what the difference is. I'm guessing there will be less breakage and not much change in the flavor.
