Ok I've been posting about this for a while, and I finally got the ingredients to make it.
This recipe makes a very large rectangular cookie sheet about 1/4'' thick
This recipe is highly adaptable, so add more or less to suit your tastes!
It turned out really well, and I'll post pics tommorrow!
1.5 C Cacao butter (melted in dehydrator)
1- 1.5 C Cacao powder (add more or less to taste)
1 C Agave (I like my chocolate very sweet)
1 Tbsp Vanilla
2-3 C Soaked, dehydrated buckwheat groats <--- make sure these are really crunchy when you get them out of the dehydrator!
Blend all wet ingredients together, including cacao till super smooth. You might have to put the mixture back in the dehydrator if it starts to firm up on you. Mix in the buckwheat little by little, until you have the consistency you want. (I made mine with lots of buckwheat because I missed the crunch of SAD foods)
Spread mixture on cookie sheet lined with waxed paper, you can also pour this into moulds. If you want to score the mixture now you can do that with cookie cutters or a pizza cutter, cover mixture with a sheet of waxed paper and put it into the freezer to harden (make sure you score it within the 1st hr it's in the freezer)

I've made this before - but I use coconut oil instead... but I would like to try this take on it! RAWk on !!! thank you for sharing !! I can't wait to see the pics!! :D

Buckwheat can be found in the bulk section of the health food store I shop at....it's right there with all the other grains.

I believe she does - soaked buckwheat (in MY mind) is equivalent to sprouted. With my FreshLife sprouter? Literally overnight my buckwheat is ready to toss into the dehydrator...

I get my buckwheat from barryfarm.com- great prices, and super nice people.
I only soak my buckwheat, I don't sprout it...
And I believe Starfire was using coconut oil instead of cacao butter

Aww thanks so much... go idea about the maple syrup, I'm going to try that next time to see if I can get them really hard in the freezer. If you want a snickers try this....

OK, sprouting buckwheat! :) My husband is in Brazil and will be back soon. I told him about these and promised I would make some and have it ready when he gets here... Apparently he has been eating all sorts of awful stuff down there and is starting to have major stomach problems. GO figure...
So he'll be up for eating a lot of my food when he gets back. This will be WONDERFUL to have prepared!! :)

what can be used for the crunch besides the buckwheat groats? We are basically on a Celiac Diet. How about soaked and then dehydrated almonds???
I am dying to try this, but would really like the crunch.

It is an herb! I know that sounds strange, but it is true and buckwheat is safe for all celiacs and others who cannot eat wheat!
OK... this is in the freezer now.
Seriously. Un - friggin - believable how much fun I have had just from slurping up the teeny little bits of leftover in my mixing bowl.
THIS STUFF IS GOOD!
I ordered cacao butter JUST for this recipe, and I am so glad I did! How could ANYone feel deprived with things like this?!
Tomorrow, I am so going to have (after, ahem, my green smoothie of course) a scone, almond mylk, and THIS! It's going to be like a taste bud mega party.
OK... sorry. Just had to share the enthusiasm for this! It's just amazing, and it's not even done!
And it's done!!! It was sooo quick (if you don't count the sprouting -- but even that was quick for sprouting!)...

Ooooh Glimr!!! I didn't make them so thick, but that seems nice!
I had English class last night, and they ate up all of my chocolate. I had almond milk too, so we played like we were in a restaurant. Very cool. Big Hit.
But now I have no more chocolate for me!!! I'm sprouting the buckwheat again today to get moving on another batch. ;)

*s* Sounds like fun!!! This is how thick they came out. I spread the recipe out on the cookie sheet and it pretty near filled it up. They are so good but I think, at least for me, self limiting. It made a ton and I think they will last me awhile. Next time I am going to get very fancy!!:D

I posted these on another thread..had to share again!
The bar I made is actually small,looks bigger.
Was so yuppy.
dehydrating only took an hour at about 105. I didn't check sooner , could have been ready earlier.
I think the dimension of adding the buckwheat holes is great and I will use them in icecreams, for a grab a snack on the goes, etc.
Also, I very loosely measured everything and they still came out sooo good!

I'm sitting here (at work) looking at those pics having the BIGGEST chocolate craving I've had in a looooooooong time.....I'm going to keep chugging my smoothie (must not go to vending machine), but you can bet I'm soaking buckwheat tonight and will hopefully have some of this tomorrow night....yummo!

Ok, just made it with carob n coconut butter. Delicious!!! Forgot tho that I ordered 4 cases of berries that are in the freezer so these have 2 go in the fridge. I'm sure they'll still be good though!!

I left mine at around 105 for probably 24 hrs, I'm sure they didn't need this long but I wanted to really make sure they were crunchy, I bet they'd be done in 12 if you made sure to spread them thinly on the mesh sheets

You could probably use coconut oil rather than coconut butter. That should help. :)
And for me, I've noticed as the seasons change the air temperature in my house makes such a HUGE difference with my coconut oil and coconut butter.
Sooooo, I just made aNOTHER batch, but this time I made half a batch with coconut oil and half with cacao butter.
It's like a crunchy Almond Joy vs. Nestle Crunch.
Two different animals at work here.
And actually, I think it would be good (but now it's late and I'm about ready to snooze!) to put an almond on top of 1 inch pieces of the half made with coconut oil.
Just a thought.
Drats. This just reminded me I forgot to soak some almonds. Oh well... Good night, just had to share the latest on these tasty treats! :)

This is strange to me because my hulls felt bone dry after only 2 hrs at 105 in the dehydrator.Wonder why there's such a differ so?

I melt mine in the dehydrator, also I melt the Cacao butter in there too... cacao butter takes a long time though, coconut butter melts pretty fast

strange, i have kept my house pretty cool all winter but they're both solid on the counter.
uh oh, if the melting the coconut butter in the dehydrator works as well as i hope it does i might be in trouble... because i'll feel compelled to make raw cheesecake... :eek: ;)

nope, new england native. too much heat dries me out. i like layering up... also any excuse to drink massive amounts of tea. ;)
i made it today and its super delicious. i don't have much freezer space so used these little heart molds i sometimes use for coconut butter/honey/bee pollen treats (also worth trying) and they came out really nicely and also adorable.

You only soak for 20 minutes or so...they're quick little guys. Then I think they sprout in just four hours if I'm not mistaken.

I did melt my cacao oil on the stove, but very low til just melted...
they are on the deck gettin' solid right now!
Just have to remember them or my racoon buddy will be having a super treat tonight!

They probably were done earlier, I just wasn't in a rush so I left mine in overnight, and because it was my first time dehydrating buckwheat I didn't know how it would turn out so I thought better safe than sorry...
Next time I'll know I don't have to leave the little buggers in the D for so long, thanks guys!

I soaked mine for a little over an hour...
I've heard you're only supposed to soak them for 20 mins and I've heard that you're supposed to soak them for 6 hrs too, but the book I had that talked about soaking buckwheat said to soak them for an hour to 2, so I followed that.

When I left my coconut oil (which has also be referred to as butter, but it really is oil) in the cupboard it was soft, a little liquidy on top and really easy to scoop out...
When I left my coconut butter (the meat and all blended up) in the cupboard it was always really stiff... go figure.
Making these now to bring to a potluck! :)

Oh. My. Gosh. I'm so excited to make this.
They were a super big hit. So get excited. One woman seemed like she was gonna have a heart attack (I'm obviously exaggerating) because she was so excited.
I didn't make it exactly to the recipe. I think I've made it to many times for that! But it was the same idea. Buckwheat is quick, so start sprouting now and you'll have yourself some of these by Sunday night.
All right, I just designed a whole web site, graphics and all. Had extra creative juices flowing along with an unhealthy heaping of insomnia thanks to moderate cacao, but NOW it's 730 and my sleep cycle is ruined.
So if you're sensitive to caffeine, in other words, use carob powder for the cacao powder!

Well, I did! Wow, they are sooo yummy! I think they will curve my cravings, we'll have to see, lol. But this is such an easy adaptable recipe.
I didn't have any cacao products, so I used carob powder and coconut butter. It's so good! I would say, you can't tell the difference, but I never tried the original recipe, lol.
I even made nut and fruit chocolate bars. Added almonds and dried cherries, on top of a bit of leftover buckwheat. Very, very good! :)
I used up a whole 16 oz. jar of coconut butter! I wasn't planning on it, only started with a 1/2 a cup, to see if I liked the outcome. Well, I still had some buckwheat crunchies left over, so I kept making more and more. Three batches and the jar was empty. :)
Oh, and the pizza cutter works great for cutting them and putting in grooves, so I can break them off in little pieces, just like real chocolate!
