Hey everyone!
I have:
a young coconut
1lb fresh dates
carrots
asparagus
celery
pears
radishes
a pumpkin
a butternut squash
sweet potatoes
beetroot
zuccini
That need using up. Please help! I don't know what to do with them!
I would most appreciate any ideas with the young coconut and dates, maybe a chocolate dessert or something? Preferably a non-dehydrator recipe, I don't want to have to wait for it hehe
The second lot of things I would most like help with is the radishes, asparagus and celery. The others I think I can probably come up with something.

Well, I went ahead and made something up with the coconut and dates, it was yum!:
The meat and water of the young coconut
A few fresh dates
A few medjool dates
A small handful of dried apricots
two small bananas
two tablespoons cacao powder
an avocado
two handfuls cashews
about 1/4 cup filtered water
about 1 tbs cacao nibs
Blend until creamy, yumm!!

Wow, I've never really prepared food with the ingredients you have. At least not the asparagus, radishes, a pumpkin, a butternut squash, sweet potatoes, and beetroot. Sorry I can't be much help with those.
But I love carrots chopped up in the food processor and then add sweet to it. I usually chop and apple too but you could use the pear, and then I add raisins and a sauce (see below). I know it calls for agave but you could leave it out or substitute.
3/4 cups dates
1/4 cups agave
1/4 cups of water
1 t cinnamon
1/2 t allspice
1/4 t cloves
1/4 t salt

Well, Ive used most the stuff:
I made juice out of the pears, beetroot, half of the carrots, some celery, some lemon, a pineapple that I realised needed using too, some apples, and some other stuff I think I can't remember!
I made the chocolate dessert that I put the recipe up for in the earlier post.
With the avocados (I can't remember if I listed them but they needed using!) I made 'Joes chip shop chips' from shazzies book detox your world, and the tomato sauce from her book too as I needed to use up some fresh dates and tomatoes (Where did all this stuff that needed using up come from??? LOL!), anyway it was so yummy! Have most of it left as Im quite full lol. I recommend everyine try those recipes! You wont regret it, especially if you like chips and ketchup :p
I made a green smoothie in the morning too which I forgot to mention so I used up lambs lettuce that also needed using (:rolleyes: )
Im gonna make matt amsdens 'mashed potatoes' to use the cauliflower (anyone tried this recipe? Is it good?) and I may make mushroom gravy too.
I still have lots of celery to deal wih and still have quite a lot of fresh dates! Some tomatoes and some yellow pepper. Thats all, but can anyone think of what to do with them? Thanks! xxx

Good job on using all that stuff up.
I'd probably make up a nut/herb cheese and spread it on the celery, tomato slices and yellow pepper slices. :D

Wow that was fast! I need to speed up my planning and executing. I am a slow poke. It gets done but not that fast. I just end up throwing everything in a shake because I am not that creative yet.
You have definitely inspired me to go make something and now with whatever I have in the fridge.

Grate some coconut, carrots, beet root, radishes, zuchini for and sweet potatoe for a mix salad of sorts.
Blend celery and pears and freez into ice cube trays, save for green smoothies
stuf dates with a nut butter of choice, freeze for a good snack later
marinate asparagus in olive oil in a ziploc, dehydrate and eat
puree pumpkin and remaining sweet potatoes freeze until you have ingredients for a raw crust and then make pumpkin pie
Juice any scraps, drink and enjoy
Freeze pulp for later and make a flax cracker
