View Full Version : Need Non-Fruity Cake Recipe

My mom is very very picky and usually doesn't like my foods, but it's her bday soon and I want to make a raw cake (mostly b/c my daughter will want it if it's cooked and she can't have sugar). So...maybe it's rude of me to make a raw cake when she'd rather have a cooked one, but anyway...
I'd love a recipe, please! Something really really good, please...and not fruity (it can have fruit, but I'd rather have a nutty or rich dessert, not a light fruity one). Thanks!!!

A really dense, fudgy chocolate cake recipe:
1 cup walnuts
1 cup dates
1 cup coconut oil, melted
1/2 cup cacao powder
1 tsp. vanilla extract (or mint for chocolate mint cake)
Put the coconut oil in the vitamix/food processor. Turn it on to low. Gradually add in the dates and walnuts. Process until smooth. Pour into a bowl and stir in the cacao powder. Put it into a well-oiled cake pan. Chill for at least one hour. Remove from the refridgerator 30 minutes before serving. Turn out of the cake pan onto a nice platter and frost with avocado chocolate frosting (see below).

Avocado chocolate frosting:
2 avocados
1/4 cup cacao powder
1/2 cup agave or honey
Blend all ingredients together in a blender/food processor or by hand until smooth.

You may want to bring both a cooked and raw cake for your mom. Just in case she doesn't like the raw cake. You'll still have the raw cake for yourself and your daughter, and your mom can enjoy the cooked cake.
