Vegetarian Tacos with Jicama Tortilla

Source: Richard Blais, Top Chef Season 4

Vegetarian Tacos with Jicama Tortilla, Avocado, Papaya & Cilantro
Prep Time: 15 minutes
Serves: 2
Directions:
Season jicama, avocado, tomato and papaya with spices, cilantro and olive oil; drizzle with key lime and lime juices. Roll into “faux” tacos. Plate rolled tacos and season top with cilantro stems.

Ingredients:
1 jicama, sliced super thin (use slicer)
1 avocado, mashed
1 tomato, diced
1 papaya, diced, mashed
1T coriander, cracked
1t cinnamon
Salt and pepper to taste
1/4 bunch cilantro, chopped (reserve chopped stems)
Drizzle of olive oil
6 key lime, juiced
2 lime, juiced

the only thing i'd add is a little cayenne :)

So wait... If you slice the jicama thinly enough, you can just roll stuff in it??? Did I miss a step?

Yes.....Maybe add a little Olive Oil on it........You would probably need a Slicer or Mandalin.

I never have good luck getting my mandoline to slice hard veggies like jicama, or turnips. What's the trick?

Wendy, What kind of mandoline do you own? I had an inexpensive one and I threw it out. It was a piece of junk. Should have known by the price! If you have a more expensive one, it should perform (hence the higher price).

Yes,I too have had a hard time using my cheap mandoline.I would really like a mandoline I can paper thin cut the toughest of veggies, like jicama. Any ideas here?

I am starting a thread with this question too.
