Broccoli salad, hands down!! Florets, diced onion, sunflower seeds, and raisins mixed w a creamed dressing made w cashews, water, acv, and a little agave. ~ Cathy

Sounds delicious! What ratio of ingredients do you reccomend for the dressing?

I make a broccoli salad very similar to the one above, except for the dressing we use 1 part olive oil, 1 part acv, 1 part agave/honey. It's divine!

I eyeball everything, so couldn't give the exact amts. However, for a big salad I use about 1.5 cups nuts; just enough water to cover the nuts (you can always add more); and two tablespoons each of acv and agave ~ Cathy
I find the stalks of raw broccoli are very nice if you slice them thinly, so as to make broccoli 'coins', for want of a better description. They're really crisp and crunchy, very much like water chestnuts, but without having to concern oneself about parasites.

Rawsinger, I totally second the broccoli salad! It's soooooo good! After we had it for dinner, hubby kept going back to the fridge for seconds and thirds (the only one of my raw dishes he's done that with!!) Here's a recipe with amounts:
Broccoli Salad
Ingredients
5 cups broccoli, chopped
1 cup sunflower seeds
½ cup onion, chopped
½ cup raisins, soaked until soft
DRESSING
1 cup cashews
3 tablespoons agave nectar
2 tablespoons raw apple cider vinegar
¼ teaspoon sea salt
¼ cup water
Preparation
Blend the dressing ingredients until smooth. Then pour over the broccoli, onion, sunflower seeds and raisins. Mix well.
Enjoy! :)

Thank you very much! I have no excuse not to eat broccoli :rolleyes: Actually, I was always one of those oddball kids who loved broccoli but I've never been a huge fan of raw brocc. Have to try these yummy sounding ideas though :)
