I got this recipe from Ebony Magazine. I made a couple of changes, (sea salt, and raw sugar), to make it completely raw, (right??). It is delicious, (if you like spicy food), and easy.
Sweet and Spicy Cucumbers
2 English cucumbers, unpeeled and very thinly sliced
1 teaspoon sea salt
½ cup white vinegar
3 tablespoons raw sugar
½ teaspoon crushed red pepper
Chopped chives
Place cucumber slices in colander. Sprinkle with salt; gently toss to coat. Let stand for 15 minutes, stirring occasionally.
Combine vinegar, sugar, and crushed red pepper in small bowl until well-combined and sugar is dissolved.
Drain cucumbers well; pat dry.
Add the cucumbers to dressing and stir to blend.
Refrigerate at least 15 minutes and up to 2 hours; serve cold.
Garnish with Chives.
