Hello, Just wondering if there is anything else you can do with a potato other than make chips since it doens't look like I can get a dehydrator yet.

A friend of mine dices them very small and eats them raw in salads for crunch. I never tried it before myself.

I'd like an answer to this one too. I can't image anything we could do with a raw potatoes. I've heard it isnt good to eat raw potatoes because the eyes are toxic.; or some screwy thing like that. Is there any truth to that ?

IMO, raw (white) potatoes are very *BLECH*! Even as chips, I don't like them...too starchy!
But I do recall seeing in one of the Boutenko books where she grates them into one of her raw soups (I think).
I guess it depends on if you actually LIKE the taste of raw potatoes, though. When I do make chips, I use either sweet potatoes or zucchini.

I'm another who doesn't use raw potatoes. So many other options, so many other choices, don't see any need ~ or desire to. But, that wasn't the question was it? :o

Forget that they exist ;) and root around for some of the other great root veggies - like parsnips for spanish rice, rutabega for "fish", turnips for ravioli, and then of course beets in great dishes - but raw potatoes out with the dish water.
