View Full Version : Spaghetti Squash recipes?

Hi,

I have had a Spaghetti squash for a while now and I don;t know what to do with it. Does anyone have any good recipe ideas that I could use, I could use relatively dimple recipes too.

I have never eaten any but I just planted some seed. Here's hoping we get some much needed information.

you CAN fork out the squash and get the stringly noodles, but its a lot of hard work. i like to use my spiralizer, and toss the noodles with...

"pesto" - basil, pinenuts, garlic, EVOO, salt, black pepper... and i usually add a handfull of spinach or some zucchini too

"tomato basil" - same as above, with lots of roma tomatoes

"greek" - lemon juice, dill, EVOO, salt, black pepper

if using any of the above sauces, i usually add some or all of the following: diced tomatoes, diced avocados, diced raw kalamata olives, diced marinated mushrooms

"curry" - lemon juice, tahini, agave, curry powder

"tahini" - lemon juice, tahini, garlic, cayenne, EVOO, black and white sesame seeds (pretty!)

"creamy orange-macnut" - orange juice, macadamia nuts, cilantro, garlic, evoo, agave, salt

One thing I like to do with squashes is sto marinate them a couple of minutes in some sea salt and olive oil, maybe a splash of lemon juice and then put them in the dehydrator for a couple of hours until they are more dry but not brittle. It really makes a great texture for the pasta.

Maui butterfly, I LOVE your suggestions for pasta sauces! especially the "creamy orange macnut"! Yummm! I can't wait til I get my spiralizer! I'm gonna be a noodle-making fool! :D

I just discovered that I love it in my salad! And I ditto the post as to it being "hard work" in getting it out. LOL
