Most vegetables are low enough in carbs not to cause a problem. Nuts are not a problem. Fruit? Can be a problem. Some fruits are lower in carbs than others. Like berries.

Maybe, yet you are not eating simple carbohydrates or simple sugars. You're getting the fiber and the nutrients and they are traveling through the system naturally instead of bypassing it and hitting the pancreas directly.

If you think of this as a food program and not a "diet" per se, might change your outlook on this whole process.

Dr. Gabriel Cousens has done lots of work with the raw and living food program and diabetes.

Hello.. I am a diabetic that has reversed the disease completely. I was diagnoised with advanced diabetes and kidney damage in 12/2007, and put on high dosage insulin shots immediately. Went vegan a month later, and now insulin free and taking minimal oral meds. Feeling great, and losing weight. Now.. in response to your question.. carbs and calories are not the culprit for the diabetic. Excess fats in our unhealthy american diet builds up in your system and interferes with the insulin trying to open the gates in your cells to let the glucose in. And the animal protein create enzymes that attack your insulin producing cells. Bottom line.. control the fat and animal protein in your diet and you will see immediate drastic results. Within 2 weeks of committing myself to a total vegan diet.. my blood sugar levels dropped to almost normal levels, I had no more fatigue, and felt wonderful. Also learn to depend on low gylcimic foods.. foods that do not instantly convert into sugars. I cannot say enough how much of a change you will feel if you try this.. it has saved my life. Please feel free to contact me and let me know how you are doing.

God Bless,
Sam

If you do a forum search for 'fruitarian' or 'diabetes' (including in the archives), you'll find plenty of discussion on this topic.
