Ok, I love asparagus and it was on sale finally and I bought a BUNCH....But I didn't think about how I was going to eat it.....I don't have a dehydrater...so can you eat asparagus raw? probably a dumb question....but I have never had it any other way but steamed or boiled....

Please help...looking at it raw with some fear in my eyes....:o

You can eat it raw. I've had it raw from my garden before. It's delicious in some kind of creamy nut or sunflower seed based dip.

Yes, I've eaten it raw, too, and experienced no problems. You might find it easier to at least chop them up, though, if you find them too fibrous to bite to pieces with your front teeth. It depends how good your asparagus is!

Yes you can eat it raw. I had some tonight for dinner as a matter of fact. I admit that I did through it in the steamer for about 30 seconds so it wasn't long enough to consider it cooked, just a touch of warm.

i added it to a marinated salad. it was GREAT but not the second day. so make sure you eat it (marinated) all at one sitting.

Alissa has a good recipe for asparagus and tomatoes...you just marinate em in some olive oil, nama shoyu, ginger, and garlic for a few hours. Delicious!
I was curious as to why she says in the recipe that it's not something she chooses to eat often. Why's that??
I could live on it...does it have negative side effects other than stinky pee?

I've eaten it raw and love it. Ani Phyo has a recipe that you cut it up into small pieces and then you put a cheese sauce on it.

I like it better blended in something like soups or dips. I just saw a recipe for guacomole subbing 3/4 parts asparagus to 1/4 parts avocado plus whatever other ingredients you usually add to guacamole. Good luck!

For anyone who (used to) like cooked asparagus, I encourage you to try it raw. I loved it cooked but remembered trying raw asparagus once long ago....ewwwww. :( After reading this thread and happening upon some gorgeous asparagus at a reasonable price, I decided to try it raw - marinated in a vinaigrette. DELICIOUS. :) Gotta love those taste bud changes!

Maybe she just doesn't like the taste of it very often. I had Ani's recipe and I'm good now for a while w/asparagus. It's not one of my favorites. Absolutely DID not like it cooked, but like it once in a great, great while raw. Tastes totally different. Sweet and crunchy!

Besides all that, it is very alkaline, which is what you want! So are cucumbers by the way.

I tried it the other day and it was interesting...not in a bad way but different....I think I might try putting it in my smoothies...

HI LEFAY!!!

I have always eaten asparagus raw before I went raw. But I especially enjoyed it marinated and then sautéed.

So I bought some asparagus yesterday and as usual I marinated it overnight BUT, I dehydrated it for about 8 hours. OMG!!!!!! It tasted just like it had been sautéed!!! I’m not kidding!!!! It was even a tad bit warm. So I would highly recommend this method.

As far as the marinate, I used olive oil, nama shouyo and an organic seasoning blend made from herbs and spices. And by the way, I also marinated and dehydrated some zucchini, yellow squash and red onions along with the asparagus. They were equally as fantastic tasting!

Let know if you decide to try it this way.

You can eat it raw, but be prepared to do a LOT of chewing...

I made the guacomole with asparagus, but didn't use any avo and it is AMAZING!!!
